Banana Chocolate Chip Crumble Muffins


1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp baking power
1/2 tsp salt
3 bananas mashed
3/4 cup white sugar
1 egg lightly beaten
1/3 cup butter melted
1/2 cup semi sweet chocolate chips
1/3 cup packed brown sugar
2 tbsp all purpose flour
1/8 tsp ground cinnamon
1 tbsp butter

1. Preheat oven to 375 degrees.  Lightly grease 10 muffin cups or line with muffin papers.
2. In a large bowl, mix together 1 1/2 flour, baking soda, baking powder and salt.  In another bowl, beat together bananas, sugar, egg and melted butter.  Stir the banana mixture into the flour mix just until moistened.  Mix in chocolate chips.
3. Spoon batter into prepared muffin cups.
4. In a small bowl, mix together brown sugar, flour, and cinnamon.  Cut in 1 tbsp butter until mixture resembles coarse corn meal.  Sprinkle topping over muffins.
5. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Tips/Tricks/Notes

I love banana muffin recipes!  They are always great to have handy for when you have a few extra bananas lying around that are nice and ripe!  This recipe, even though it has lots of ingredients, was SUPER easy and quick to do!  It also tastes yummy!  My only recommendation is on the oven temp.  This recipe calls for 375 and I didn't even need my oven on 350, so something to watch for.

Cheesy Cheddar 'n Ham Loaf


1 lb whole wheat pizza dough 
1/2 lb sliced black forest ham
1 cup marble cheese shredded 
1/4 cup Miracle Whip dressing
1 egg, beaten
1 tbsp parmesan grated cheese
 

1. Heat oven to 350°F. Roll dough on lightly floured surface to 12x8-inch rectangle. (If dough is difficult to roll, cover with plastic wrap and let stand at room temperature for 30 min. before rolling out.) 
2. Cover dough with ham, overlapping slices slightly and leaving a 1/2-inch border around all sides. Mix Cheddar cheese and dressing; spread over ham. 
3. Moisten edges of dough with water. Starting at 1 of the long sides, fold 1/3 of dough over filling; repeat with other long side. Firmly pinch ends of dough together to seal. Place, seam-side down, on lightly greased baking sheet. Cut 3 diagonal slits in top of dough with kitchen shears. Brush with egg; sprinkle with Parmesan.
4. Bake 35 to 40 min. or until golden brown. Cool 10 min. before slicing to serve.

Tips/Tricks/Notes 

This recipe is SO easy and SO tasty!  I used a whole wheat pizza dough from the grocery store, and instead of just cheddar cheese that the original recipe calls for, I used marble, as I prefer this.  This recipe would easily feed at least four people.  I served it with just a caesar salad on the side.  Definitely recommend if you are looking for something quick and easy for lunch or dinner!
